Lobster

Lobster

Potato, celery, cognac.

Potatoes were cut into a shape like fettuccine and deep fried. Curled celery. I also made a spaghetti with sour cream. Cognac foam and tarragon leaves.

Flavors are very clean and simple. Presentation is very sophisticated and focused. A lot of different textures as well.
